Egg and Veggie Scramble

Start everyday in the best way with savory, flavor and protein packed simple dishes like this one - delectable sauteed greens and eggs. You can have a super lunch or dinner too by putting in a wrap or serving over your favorite whole grain. Easiest idea - saute many servings of onions and greens in advance so you can simply warm up in your skillet and then add favorite seasonings and eggs!

Total Cook Time: 10 min
Yield: 1 serving


  • 2 whole eggs (or egg whites) - scrambled

  • ¼ medium onion, chopped bite-sized

  • 1-2 cloves garlic, chopped fine

  • 2 large handful of power greens or spinach leaves (organic, thoroughly cleaned)

  • 1 Tbsp coconut of avocado oil

  • 1 tsp turmeric

  • Salt and pepper to taste

  • *optional, cayenne pepper to taste


Heat 10” sauté pan over medium heat. Add oil and sauté onion until translucent. Add garlic and sauté for one minute, then add greens. Stir until greens are wilted. They have plenty of moisture and will wilt without additional oil. Pour eggs in and scramble in spices when eggs start to become more solid. Enjoy!

Note – you can add any veggies you enjoy or top with avocado. Wrap in a healthy, whole grain wrap or rice paper.
